- 500g baby eggplant sliced lengthways
- 2 red capsicums quartered and seeded
- 4 pieces turkish bread split
- 80g baby rocket leaves
- 250g marinated artichoke hearts quartered
- 100g feta crumbled
- chickpea puree
- 420g can chickpeas rinsed and drained
- 1 garlic clove
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 1 2 tbsp parsley chopped
- salt pepper
The Instruction of vegetarian delight
- preheat a barbeque plate approximately medium high toss eggplant similar to 1u00c2u00bd tablespoons of oil brush long lasting oil on top of higher than capsicum cook eggplant for 1 2 mins each side until tender transfer to a bowl cook capsicum for 3 4 mins each side until skin blackens transfer to a plastic bag seal and set aside peel off skin
- meanwhile process chickpeas garlic olive oil and lemon juice in a food processor until smooth trouble in parsley and season
- preheat a sandwich press take forward some puree on top of higher than each slice of bread lump bump later rocket leaves capsicum eggplant artichoke hearts and feta summit zenith next a second slice of bread and press next to slightly cook in sandwich press for 4 5 minutes cut in half support immediately
